Air movers push moisture out of wet materials and into the surrounding air. Dehumidifiers remove that moisture from the air so evaporation can continue. Running one without the other just moves humid air around. Drying is finished when readings match a documented dry standard, not when a surface feels dry.

Why air movers and dehumidifiers only work together
An air mover is a high-velocity fan. Its job is to break up the thin layer of saturated air that sits against a wet surface and slows evaporation, which pushes moisture out of the material and into the room air. It removes nothing from the building; it relocates water from the wall into the atmosphere.
A dehumidifier does the other half: it pulls that water vapor back out of the air so the room can keep accepting more. Run air movers alone in a closed room and humidity climbs until evaporation nearly stops. Run a dehumidifier alone and the materials release moisture far too slowly. The pairing is the method.
The three kinds of dehumidification and where each fits
Refrigerant dehumidifiers condense moisture on a cold coil and work well in ordinary warm, humid conditions. Low-grain refrigerant units — LGR — are built to keep pulling water out of air that is already fairly dry, which is what late-stage structural drying requires.
Desiccant dehumidifiers use a moisture-absorbing material rather than a cold coil, and they keep working at low temperatures and low humidity where refrigerant units lose efficiency. Which one belongs on a job is a technical judgment about temperature and the stage of drying, not a measure of how serious your loss is.
What "dry" means as a measurement
Dry is a measurement against a dry standard, not a judgment that a surface feels dry to the hand. The dry standard is established by measuring unaffected material of the same type in the same building — an untouched section of the same wall, the same subfloor in the next room — and using that reading as the target.
This matters because materials feel dry at the surface long before they are dry through their thickness, and because different materials have completely different normal moisture content. A hardwood floor and a sheet of drywall at the same meter reading are not in the same condition.
What moisture meters and thermal cameras can and cannot tell you
Pin meters measure electrical resistance between two probes driven into the material and give a reading for that specific depth and spot. Pinless meters read a shallow zone without making holes, which is convenient for scanning and less definitive for depth. A thermo-hygrometer measures the air rather than the material and is how humidity and grains per pound get tracked.
Thermal imaging is the one most often oversold. An infrared camera shows temperature difference across a surface. Evaporating water cools a surface, so wet areas often appear as cool patches — but so does a draft, a stud, a pipe or a shaded wall. Thermal imaging is a tool for deciding where to put a moisture meter, not a moisture reading in itself.
What you can reasonably do yourself, and where it stops
On a small Category 1 area caught quickly, a homeowner can do real good: get the water off the surface, move contents up onto dry ground, open windows if the outside air is genuinely drier than the inside air, and run a household fan across the wet area rather than pointed at it. A rented dehumidifier in a closed room helps, provided the room really is closed — running one with the windows open is just dehumidifying the neighbourhood.
Where it stops is where measurement starts. Without a moisture meter you cannot know whether the material is dry through its thickness or only at the surface, and surface-dry material with a wet core is exactly how mould and cupped flooring appear a fortnight later. It also stops at any Category 2 or 3 water, anything inside a wall or under a floor assembly, and anything near a panel or wet wiring. If the affected area is more than a small part of one room, the honest answer is that household equipment is not sized for it.
